- 1 Tgolden syrup (can substitute white corn syrup or honey)
- 1/2 c butter
- 1 c oats
- 1 c flour
- 1 cup sugar
- 3/4 c flaked or shredded coconut
- 1 t baking soda
- 2 T boiling water
- Heat oven to 350 degrees.
- Heat corn syrup and butter in a small saucepan until melted.
- Mix oats, flour, sugar and coconut in a medium bowl.
- Stir the soda and the boiling water together, then add to the butter/syrup mixture.
- Add wet ingredients to the dry ingredients. Drop by teaspoons on greased cookie sheets.
- Bake for 18 to 20 minutes.
Makes 12 large cookies.
