Eggplant with Spicy Meat
Eggplant with Spicy Meat- 4 Japanese eggplants or 1 large eggplant (about 1 lb)
- 1 T chili oil
- 1 T minced garlic
- 1 c ground pork
- 1 T soy sauce
- 3/4 c chicken broth
- 2 T hoisin sauce
- 1T rice wine vinegar
- 2 t cornstarch
- 1 t water
- 1 T chopped green onion (use green part of onion only)
- Cut eggplant into 1/2 inch diagonal slices.
- Microwave eggplants until tender.
- Add chili oil to skillet and cook 30 seconds.
- Add garlic and cook 10 seconds.
- Add pork, soy sauce, broth and hoisin sauce and stir-fry until pork is brown.
- Add vinegar and eggplants, toss lightly to heat through.
- Mix cornstarch and water and stir into pork mixture. Cook and stir until ingredients glisten.
- Add green onion and stir-fry 5 seconds.
- Serve at once.
